chitinases and chitinolytic enzymes
Chitinases are enzymes that can break down chitin, a complex polysaccharide found in the exoskeletons of insects and shellfish. Chitinolytic enzymes refer to any enzymes involved in the process of chitin degradation, which includes chitinases as well as other enzymes that support the breakdown of chitin into smaller molecules.
