Glycemic index (GI) is a measurement of how quickly a specific food raises blood sugar levels compared to pure glucose. Glycemic load (GL), on the other hand, takes into account both the glycemic index and the amount of carbohydrates in a serving of food. It helps determine the overall effect of a food on blood sugar, considering both the quality and quantity of carbohydrates.
